HyperKitty will display a message in monospace if you click the 'A' icon at the bottom of the message. I don't know offhand how you would make that the default.
For styles, they are mostly SCSS in the directory hyperkitty/static and CSS in the directory postorius/static/postorius. I think you'd have to find the relevant styles and edit them.
