Anonymous lists should be removing any X-MailFrom: or X-Envelope-From: headers from delivered mail. The envelope-from in the outgoing mail should be the list-bounces address, not the original sender. If you grep Mailman's mailman.log for `bounces` I suspect you will see that it has died and not restarted. You may or may not find additional information in the log as to why it died, but in any case restarting Mailman should start everything again. Your nginx config posted at https://lists.mailman3.org/archives/list/mailman-users@mailman3.org/message… seems a bit off. If you compare that to https://docs.mailman3.org/en/latest/install/virtualenv.html#nginx-configura… you'll see you are missing a `location /static/` directive and you've included `proxy_hide_header upgrade;`. I'm not sure why you have this.
