My email address appears in quoted test in my list. Hoot change that.

Quoted replies are optional and include this message by default if someone replies to your message. This is added by user's email client and the same behavior is replicated by Hyperkitty when you reply from the web interface.
There is really no way to disable this right now.

Right, it totally depends on how one is replying.
In the web interface, since you already seem to be using it, there is a button which adds the quoted text if needed.
For email clients, the behavior varies from one client to other and there are tons of them. Some will quote by default, some won't. Then, it also depends on the users, since even if it is not the default, they can optionally add quotes.
