No. In fact, you can run both at the same time. Not for the same list, obviously. And it requires a fair amount of planning and careful attention to your web and MTA configurations. As far as I know there are no naming conflicts in the default installations, Mailman 2 installs into directory trees under directories named "mailman", while Mailman 3 installs under "mailman3".

So at what point did it "block" ? I can't help you when you don't give me exact information and error messages.

I don't read French very well, but your original logs at https://paste.yunohost.org/raw/xiqoyajegi and https://paste.yunohost.org/raw/hujesebita show installation failing because it fails to create /etc/mailman3/mailman.cfg.
This is either an issue with the Debian package or the YunoHost installer or an incompatibility between them.
I would go first to YunoHost for help and then to Debian if necessary.

As previously advised by Mark Sapiro, you are better off taking to the YunoHost support people for help. They will most likely help you with the failing dependencies issue.
But I also wonder - why don't you follow the virtualenv method to install?

Finally succeed to reinstall with a very precious help !!!
/etc/mailman3 folder was removed before the mailman3 package was supressed, apt noticed it and he believed that it was a modification of the configuration of mailman that was wanted, so each time the debian mailman3 package was reinstalled, he did not put the conf in /etc/mailman3, which caused the package installation to crash, and therefore the app install on ynh
