You can, but the easiest thing is just replace the line
Environment="MAILMAN_CONFIG_FILE=/etc/mailman3/mailman.cfg"
in /etc/systemd/system/mailman3.service with
Environment="MAILMAN_CONFIG_FILE=/opt/mailman/mm/mailman.cfg"
