That's a good question, but I don't know the answer. I can see that it has fewer moving parts than docker-mailman, but whether the people who find the current venv install too complex would find it appealing, I can't say.
There is also the problem that you will need some way to generate the various authentication tokens and install them in the image ex post -- they can't be hard-coded. I don't think that's too hard, though.
