Please excuse me, if this has been discussed before and I missed it, but what is the added value of going through the trouble of manually installing mailman3, rather than doing a simple apt install mailman3-full? I would assume that in most cases, a well maintained package is preferable, because it makes life easier. Are the Debian packages for Mailman3 in some way deficient?
As always, packages in Debian stable are not as new as the latest git checkout.
So, if the stable version work for you: great.
If you want to have something newer, either try the packages from testing / unstable, or some checkout from git. If you want to improve the code, git checkouts are of course also preferred.
Of course, this is true not only for mailman3, but also for exim, kde, gimp, whatever.
